# Recipe Steps:

02 - In a small saucepan over medium heat, combine black beans, cumin, chili powder, smoked paprika, salt, and pepper. Heat through for 5-7 minutes, stirring occasionally.
03 - Dice peppers, halve tomatoes, dice onion, and slice avocado. If using fresh corn, steam or grill briefly as desired.
04 - Divide cooked rice among 4 bowls. Top each with black beans, bell peppers, corn, cherry tomatoes, red onion, and avocado slices.
05 - Sprinkle queso fresco or cheddar cheese, add a dollop of sour cream, and garnish with cilantro. Serve with lime wedges.

# Expert Suggestions:

01 -
  • You can customize the toppings based on what's in your fridge, making it impossible to get bored
  • The spiced beans taste like they've been simmering all day but actually take minutes
  • Everything comes together in under an hour with mostly pantry staples
02 -
  • Let the rice rest for 5 minutes after cooking before fluffing, it makes such a difference in texture
  • The beans taste even better if you make them ahead and let the spices meld together
  • Don't add the sour cream until right before serving, or it will make everything soggy
03 -
  • Squeeze half the lime over the beans while they're heating, it brightens the whole dish
  • If your avocados aren't quite ripe, warm them slightly in the microwave for 20 seconds
