# Recipe Steps:
01 - Preheat oven to 400°F (200°C). Line a baking tray with parchment paper and set aside.
02 - Combine cottage cheese, eggs, flour, salt, garlic powder, and baking powder in a food processor or bowl; blend until smooth and homogenous using a food processor or hand blender.
03 - Divide the batter into two equal portions. Using a spatula, spread each portion into an oval on the prepared tray about 1/4 inch (0.25 in) thick.
04 - Bake in the preheated oven for 18 to 20 minutes, or until edges are golden and the centers are set.
05 - Remove flatbreads from the oven and allow them to cool on the tray for a few minutes to firm up before topping.
06 - Spread 2 tablespoons of basil pesto over each flatbread, arrange halved cherry tomatoes on top, season with freshly ground black pepper and sprinkle optional grated Parmesan.
07 - Garnish with fresh basil leaves, slice into portions if desired, and serve warm.
