Havarti & Caramelized Leek Grilled Cheese (Print Version)

Decadent grilled cheese with creamy Havarti and sweet caramelized leeks nestled between golden, buttery artisan bread.

# Ingredient List:

→ Vegetables

01 - 2 medium leeks, white and light green parts only, thinly sliced
02 - 1 tablespoon olive oil
03 - 1 tablespoon unsalted butter
04 - Pinch of salt
05 - Pinch of black pepper

→ Cheese

06 - 4 ounces Havarti cheese, sliced

→ Bread & Spreads

07 - 4 slices artisan or sourdough bread
08 - 2 tablespoons unsalted butter, softened

# Recipe Steps:

01 - Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add sliced leeks, salt, and pepper. Cook, stirring occasionally, until leeks are soft and caramelized, approximately 12 to 15 minutes. Transfer to a plate and set aside.
02 - Lay out all four bread slices. Spread one side of each slice with softened butter.
03 - Place two slices buttered side down on a work surface. Evenly distribute caramelized leeks on top of each slice. Layer Havarti cheese slices over the leeks. Top with remaining bread slices, buttered side up.
04 - Heat a clean skillet or griddle over medium-low heat. Place assembled sandwiches in the skillet and cook until bread is golden brown and cheese is melted, approximately 3 to 4 minutes per side. Press gently with a spatula for even grilling and optimal cheese melting.
05 - Slice each sandwich in half diagonally and serve immediately while warm.

# Expert Suggestions:

01 -
  • The leeks become something entirely different, melting into a sweet jammy consistency that pairs perfectly with creamy Havarti
  • This feels fancy enough for company but comes together in the time it takes to cook the leeks down
02 -
  • Patience with the leeks is everything, rushed leeks stay crunchy and sharp instead of developing that signature sweetness
  • Medium low heat might feel too slow but high heat will burn the bread before the cheese melts
03 -
  • Clean leeks thoroughly after slicing, they hide dirt between those layers and nothing ruins a sandwich like grit
  • Let the sandwiches rest for a minute after grilling so the cheese sets slightly and does not ooze out when you cut them
