# Recipe Steps:

01 - Preheat the oven to 400°F.
02 - Toss carrots, sweet potato, and parsnip with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25 to 30 minutes until tender and lightly caramelized.
03 - Heat remaining 1 tablespoon olive oil in a large pot over medium heat. Sauté chopped onion until soft, about 5 minutes. Add garlic, ground ginger, and ground cinnamon; cook for 1 minute until fragrant.
04 - Add the roasted vegetables to the pot. Pour in vegetable broth and bring to a gentle simmer. Cook for 10 minutes to meld the flavors.
05 - Remove from heat, then stir in maple syrup and coconut milk or heavy cream. Blend with an immersion blender until smooth and creamy, or carefully puree in batches using a countertop blender.
06 - Adjust seasoning with salt and pepper as needed. Serve hot garnished with chopped parsley, a dollop of yogurt or crème fraîche, and an optional drizzle of maple syrup.

# Expert Suggestions:

01 -
  • It tastes like comfort without feeling heavy, just sweet enough to feel special.
  • The roasting step brings out a caramelized depth you cant get from boiling alone.
  • One pot, one sheet pan, and youre done in under an hour.
02 -
  • Dont skip roasting the vegetables, boiling them instead makes the soup taste watery and dull.
  • Add the maple syrup after you remove the pot from heat so it doesnt cook off and lose its delicate sweetness.
03 -
  • Taste your maple syrup before adding it, some brands are stronger than others and you might need less.
  • If the soup feels too thick after blending, thin it with warm broth a little at a time until it reaches the consistency you like.
