Ingredients
- 2 medium sweet potatoes: peeled and cut into 1/2-inch cubes
- 1 small red onion: thinly sliced
- 1 red bell pepper: diced
- 2 cups baby spinach leaves: fresh
- 1 (15 oz / 425 g) can black beans: drained and rinsed
- 4 large flour tortillas: or gluten-free tortillas
- 2 tbsp olive oil:
- 1 tsp ground cumin:
- 1/2 tsp smoked paprika:
- 1/2 tsp ground cinnamon:
- 1/2 tsp ground coriander:
- 1/4 tsp cayenne pepper: optional
- Salt and freshly ground black pepper: to taste

- 1/4 cup chopped fresh cilantro: optional

Instructions
- Preheat Oven:
